Our small batches start with a Southern cuisine-inspired, mash bill of 75% white corn, 12% winter white wheat, and 13% malted barley. LIke our other wheated bourbons, we used more energy intensive low temperature fermentation. As a result, the yeast activity is more restrained, which allows for a distinct and more complex flavor profile.
